Our honeys come from our family-run apiary in Poland. We extract them raw, unfiltered and unheated – after harvesting, the honey is only coarsely strained to remove wax residue. This way, each variety keeps its own character, its typical colour and its full aroma.
Many honeys on the market are filtered or warmed so that they stay liquid for longer. We don't do that. Our honey goes into the jar just as it comes from the comb – only freed from wax residue. That is why the varieties differ noticeably in colour, consistency and taste.
Natural honey crystallises over time. Rapeseed honey becomes smooth and creamy within a few weeks, while acacia honey stays liquid for a long time. This is not a quality defect but a natural sign of real, untreated honey. If you would like it liquid again, place the jar in a warm water bath at a maximum of 40 °C – not in the microwave.
Mild varieties such as acacia or rapeseed go well with tea, yoghurt, muesli and for sweetening desserts without masking their own flavour. Aromatic varieties such as linden or raspberry are a treat on their own on fresh bread. Strong, dark honeys such as buckwheat or forest honey pair well with cheese, wholemeal bread and savoury dishes. Tip: let hot tea cool down briefly before stirring in the honey – this preserves its delicate aroma.
